Easiest Clam Chowder - EVER

It doesn’t get simpler than this. Serves 6. Prep time - 5 minutes or less, cooking time, 30 minutes.

Ingredients
1 Can of cream of broccoli soup (you can use chicken / mushroom or whatever, but I like broccoli/celery)
1 Can of baby clams
1 big can of tuna packed in vegetable oil, drained
1 lb of parisienne potatoes, or 1 lb of diced potatoes
1 TBSP chopped fresh chives or green onions
3 slices (about 1 TBSP) of ginger
1/2 TSP white pepper
1/2 TSP seasalt
1/2 Cup of milk (reserved til the end)

Instructions
Prepare your canned soup according to package instructions (with milk and water, usually), add clam juice from the can and whisk until smooth over low heat. Add potatoes and ginger, bring to a boil, then simmer for 15 minutes with the lid almost closed. Remove ginger after the potatoes are done.

Open the lid, turn the heat up to medium high, and add the rest of the ingredients including the extra milk. Stir until everything is heated through. Soup should be thick enough to coat a spoon.

    1 can of Campbell’s New England Clam Chowder Soup At Hand

    Instructions

    Remove cap before microwaving!
    Microwave Directions: Shake before opening.
    Microwave ovens vary. Time given is approximate.
    Pull plastic cap to remove; set aside. Plastic cap is not microwavable.
    Pull tab to remove metal lid and discard.
    Microwave uncovered on High 1 min. 15 sec. to 1 min. 30 sec.
    Careful, leave in microwave 1 min., then stir thoroughly for even soup temperature.
    Replace plastic cap.

    thanks for posting the recipe. i’ve been looking clam chowder for a very long time, but the closest i got to it in melbourne was more like bacon chowder (minus the clams). i’ll definitely try out making it.

    that’s a nice recipe u have..just a suggestion for you, maybe u can render bacon and sweat mirepoix in vegetable oil and butter at the beginning..it surely gives more aroma and flavour..

    Jay/ Well, that’d work too…but I’m just sick of Parker Lee packaged chinese meals lately. :)
    BTW, I’m not a fan of using bacon / dripping in clam chowder simply because the fat tends to stay…and swirl on top of the soup. Ick. Not to mention that it adds an extra 10 minutes of stove time and saturated fat.

    If you make this with low-sodium/fat cream soup, it’s actually a lot healthier than the traditional clam chowder. Thanks for the overwhelming response to this one!

    (Now read some of the more complicated ones on here, dammit. That Sheppard’s pie is hard but it needs attention too. :p)

    ehrmm, I am not used to calling that fat, i just call it SUCS and SUCS means priceless that’s money girl!! that’s the point the SUCS left on the pan when we render bacon and sweat mirepoix is what we are looking for..just bring t simmer and skim or defat it if any fat show up…I think we all wouldnt mind to wait another 5-10 minutes to have better result, would you?

    Why no rendering of bacon? Because my boyfriend would burn bacon, and therefore it’s not easy…(yes, he’s very lucky he lives with me. :p)

    Answers: Tuna/salmon - doesn’t matter. salmon is packed in more salt, so ditch the salt if you’re using salmon.

    Renzi/ if you really, really suck in cooking, just follow a recipe to the letter. Most of mine are pretty fool-proof, since my bf sometimes make the food from my notes.
